Telangana Hyderabadi Chicken Kurra

Ingredients

Olive oil-8 tbsp

Mustard seeds-1tsp

Cumin seeds-1tsp

Green chillies-2(optional)

Garlic-4 cloves

Ginger and garlic paste-2tsp

Boneless chicken thighs-640 grams one pack try making this dish only with chicken thighs it will taste amazing.

Onion-3

Coconut milk-400ml

Curry leaves-1 stem
-
Salt-1tsp
-
Turmeric-1tsp

Chilli powder-1tsp
-
Coriander powder-2tsp
-
Coriander-2- stems for garnishing

Garam masala powder-2tsp

Tomatoes-3 chopped into small pieces
Method;

Combination with saffron flavoured rice

Wash and chop the tomatoes, onions into small pieces .chop the garlic cloves into small pieces ,roughly chop the coriander leaves and keep all together .wash the chicken and dice them into small pieces.

Heat the deep non-stick frying pan into medium flame.

When the oil is ready, add in mustard seeds, cumin, onions that been chopped into small pieces, curry leaves you always as to tear them to release the aroma from leaves ,add in chopped garlic let it fry 5 to 10 minutes .Add ginger ,garlic paste mix well cook for 10 minutes. add dry spices salt, chilli power, turmeric, gram masala ,coriander power.

Then add the diced chicken pieces mix well let it fry for 10 minutes .Now add in chopped tomato or optional you can blend the fresh tomatoes into puree. put the lid on half way closed.

Once the tomatoes are nicely cooked you add in half the cane of coconut milk and mix well .

Mix well and cook for 20 minutes until chicken is well cooked and all the water has been absorbed.

With the lid only half closed, and let it simmer for another 10 minutes.

Wait for 10 to 15 minutes .make sure chicken is fully cooked and you getting amazing aroma with lovely spices .
