Classic Tasty Chicken Pakoda

Ingredients:
  • Boneless Chicken thighs-320g or vegetarians- 3 medium carrots
  • Gram flour-4 tbsp
  • Rice flour- 1 or 2 tsp
  • Turmeric powder-1 tsp
  • Chilli powder-1 tsp
  • Green chilli paste(optional) -1 to 2 tsp
  • Ginger and garlic paste-1 tsp
  • Cumin seeds-1 tsp
  • Salt-1 tsp
  • Garam masala powder-1tsp
  • Coriander powder- 1tsp
  • Black pepper powder- 1tsp
  • Small red onion-1 (optional to have on side with pakoda
  • Lime -one
  • Dessicated coconut (medium course)-1 to 2 tsp
  • Ajwain seeds-(In english its called bishop's weed,carom seeds strong smell and flavour similar to oregano,thyme.It is good for relive bloating,gas,indigestion- Only needs to add small amount, like half a tsp
  • Fresh coriander leaves -2 stems
  • Fresh curry leaves-2 stems available in big sainsbury's,waitrose supermarket,online or any Indian grocery shops
  • Sunflower oil-250ml to deep fry the chicken pakoda
  • If you are making mango chutney you need:
  • Geeta mango chutney or chilli sauce or sriracha sauce or any chutney -2 tbsp
  • Plain yogurt-2 tbsp
  • Chilli powder-1 tsp

Method:
  1. wash and dice the chicken into small pieces and keep them ready .If you are vegetarian peel and chop carrots into small long pieces.
  2. Dice a small red onion into thin slices optional to have on the side with pakoda, Chop the coriander,very finely, keep chopped lime ready 
  3. Now heat a frying pan with oil in medium flame .while oil is heating .
  4. Take a bowl mix chicken ,gram flour, rice flour,coriander,salt, garam masala powder, coriander powder, chilli powder, green chilli paste, ajwain seeds,dessicated coconut powder, cumin seeds,black pepper powder
  5. Mix all together well with your fingers .Keep on the side 
  6. Check the oil is fully heated and slowly drop chicken mix into hot oil one by one with taking lots of care .Remember Don't try to pack the pan by adding so many chicken pieces .
  7. Keep turning now and then until they all fry into slightly golden brown in colour .
  8. Remove them into a plate with kitchen tissue paper .
  9. Switch of the flame garnish with coriander leaves .
  10. In a different small pan heat a some amount of oil in medium flame .Once the oil is ready add in curry leaves and let them fry nicely and switch of the flame .
  11. Garnish the fried curry leaves onto chicken for extra aroma and lovely taste when you bite into the chicken pakoda.
  12. Take a bowl add three tbsp of Geeta mango chutney mix it with plain yogurt have it on side with hot hot chicken pakodas with your friends and family .
Enjoy hot hot tasty chicken pakdos by dipping into sweet mango chutney it will be tasting superb
