Classic Rice Dishes of South India With Sona Masoori
Ingredients and Method:

Sona Masoori Rice -1 or 2 cups

Water-for one cup rice its 2 cups of water or 2 cups of rice its 4 cups of water .

Wash the rice twice with water by rubbing with your hands pour the water out repeat twice .

Now measure the water and cook the rice in medium flame for 20 minutes roughly placing lid half open
-
Only last 5 minutes put the lid on full and cook the rice in low flame.

Check the rice is fully cooked if not drizzle some water on top of the rice and let it rest for 2 to 3 minutes switch of the flame your perfect plain rice is ready for you have to enjoy hot hot .

Saffron-Small pinch soaked in 1 tsp of warm water or warm milk

Cashew nuts or any of your favourite nuts -10

Cumin seeds-1 tsp

Bay leaves-2
-
Green cardamom pods-2

Salt- 1 tsp

Cinnamon stick small -half
-
Cloves-3
-
Olive oil-3 tbsp
-
Mint leaves -1 to 2 stems

Wash the rice twice with the water now measure one cup rice and two of water in a sauce pan cook with medium flame for 20 minutes with lid half open just when you got last 5 minutes then you put full lid on .

while heat a frying pan on medium flame add the oil .When the oil ready add cashew nuts ,cumin seeds, bay leaves, cinnamon stick, clove, cardamom ,washed and chopped mint leaves fry all together and switch of the flame add this into the cooking rice with salt and saffron soaked in water mix well let it cook

After 20 minutes check the rice is fully cooked with amazing fragrance of saffron. The wow smell of cardamom when you open the lid is great .Switch of the flame .Enjoy hot hot divine looking saffron rice with family .

Fresh peas-80g try to use fresh peas if you can get them or you can use frozen pea too .

Shallot-1

Olive oil-4 tbsp

Salt-1 tsp

Mint-1 stem

Cinnamon stick-half

Cumin seeds-half a tsp

Water -2 cups if you are cooking 1 cup rice or if you are making 2 cups of rice you need 4 cups of water.

Wash the rice twice with water and cook with medium flame in a sauce pan for 20 minutes with lid half open.

Mean while heat the frying pan in medium flame with oil .Once the oil been heated add in cumin seeds, cardamom pods, chopped mint leaves ,cloves, onion, salt, pea mix all together well .Once the onion cooks well and bit caramelised switch of the flame .

Add this pea into cooking rice and mix well let it all cook .

Just in the end put full lid on the rice after 5 minutes check the rice is fully cooked switch of the flame .
