Indian Masala Omettle with warm spices

  • Coloured pepper-1 red,1 yellow
  • Carrot-1 grated 
  • Tomatoes-2 medium size 
  • Eggs-4 to 6 large
  • Coriander-2 stems
  • Garlic-2 cloves
  • Cumin seeds-1 tsp
  • Onion shallot-2 medium size 
  • Fresh Sun -soaked tomatoes-small pack
  • Salt-1 tsp
  • Chilli powder-1 tsp
  • Turmeric-half a tsp
  • Garam masala-1 tsp
  • Coriander powder-1 tsp
  • Black pepper-1 tsp
  • Olive oil-6 to 8 tbsp
  • Geeta sweet mango chutney-320g or any of your favourite chutney we need two to three tbsp
  • Plain yogurt-1 to 2 tbsp
  • Sesame seeds- 2 tsp(optional)

Method:
 
  1. Wash and chop ,shallots, peppers, tomatoes, garlic, mint, coriander, sun soaked tomatoes ,into small pieces .Peel the carrot skin and grate the carrot keep them ready .
  2. Break the eggs into a bowl and whisk it with fork for 2 to 3 minutes.
  3. Heat a non-stick frying pan with medium flame adding oil .Once the oil is ready add cumin seeds, shallots, mix well then add peppers, grated carrot, garlic. mint ,tomatoes ,black pepper, turmeric ,salt, chilli powder, coriander powder, garam masala, chopped sun soaked mix all well wait until they all cook and then pour in egg mix quickly mix before it starting to set .
  4. Keep the lid on for 5 to 7 minutes until its fully cooked and slowly turn over once let it cook for 5 to 6 minutes and then switch it off .
  5. Now dry roast the sesame seeds in a frying pan with low flame and mix with Geeta sweet mango chutney in a bowl by adding plain yogurt and serve it with omelette .
  6. Enjoy amazing tasting masala omelette by dipping into tasty sweet simple chutney with your friends and family.
