Ingredients:
Shorba Classic Side Dish For Authentic Biryanis

Bay leaves-2

Big black cardamom-1

Plain yogurt-50 ml
-
Plum tomatoes-10 to 15

Olive oil-8 tbsp
-
Coconut milk-160g
-
Ginger and garlic paste -1 tsp
-
Caramelised onions-4 tbsp
-
Garlic cloves-2
-
Green chillies-2
-
Turmeric-1 tsp
-
Salt-1 tsp
-
Coriander powder-1 tsp
-
Garam masala powder- 1tsp
-
Black pepper-half a tsp

Method:

Chop two onions into thin slices and caramelise them by 3 tbsp of oil in non-stick frying pan with medium flame .Add half a tsp of salt put the lid on let them fry for 15 t0 20 minutes. Once they nicely caramelise switch of the flame .

Chop the tomatoes, garlic ,mint, coriander ,one onion into small pieces keep them on side .

Heat a non-stick frying pan in medium flame add in oil .Once the oil been heated .Add in onion let it cook and add in tomatoes ,mint, coriander, garlic mix well put the lid on for 15 to 20 minutes until tomatoes fully cooked and then blend the mix in blender with the caramelised onions into smooth paste .Keep it on side

Now in the same pan add in bit more oil and fry bay leaves, big cardamoms, cinnamon stick, green cardamoms, star anise, cloves ,green chillies, ginger and garlic paste fry for a minute .

Now add in blended tomato puree mix well .Add in turmeric powder ,salt, garam masala ,coriander powder ,half a tsp of black pepper, mix well .

Now in a cup or bowl mix yogurt, cashew nut paste ,coconut milk into a paste and pour it into tomato mix .Put the lid on let it cook for 10 to 15 minutes .Garnish with finely chopped coriander leaves .Switch of the flame .
